spice up your summer

grilled aromatic lamb chops with spicy potato slices

serves 4 makes 12 chops

ingredients

  • 12 lamb chops
  • 2 teaspoons honey
  • Juice of 2 limes
  • Old El Paso® Spice Mix for Fajitas (35g)
  • 4 potatoes, peeled and cut into 1cm slices
  • 2 tablespoons vegetable or olive oil
  • Old El Paso® Spice Mix for Tacos (35g)

preparation

Pre-heat oven to 200°C.

For marinade, mix the Spice Mix for Fajitas, honey and lime juice in a large bowl , then add the lamb chops and turn to coat well with the mixture. Cover and place in the fridge for 30 minutes.

Toss potato slices with the oil and sprinkle with the Old El Paso® Spice Mix for Tacos. Lay slices in a single layer on a baking sheet and bake for 30 minutes until golden brown and fully cooked. Cook lamb on a medium-hot BBQ, griddle pan or under the grill for 3-4 minutes each side until thoroughly cooked through.

Select a suitably lazy summer's evening and serve with a fresh green salad.
