bbq fajita skewers with chargrilled vegetables

serves 4 makes 8 fajitas

ingredients

  • Old El Paso® Original Smoky BBQ Fajita Kit (505g)
  • 4 skinless, boneless chicken breasts cut into 1-inch pieces
  • 1 green or yellow pepper, cut into 1-inch pieces
  • 1 red or white onion, cut into 1-inch chunks
  • 1 tablespoon of vegetable oil
  • 1 medium head of lettuce
  • 2 limes, cut into quarters
  • 4 tablespoons mayonnaise
  • Sour cream and fresh coriander Optional
  • 8 skewers

preparation

Thread the skewers with alternate chunks of chicken and vegetables, then brush with oil and sprinkle over the Spice Mix for Fajitas.

Cook for 8-10 minutes on a medium hot BBQ or grill, turning a couple of times until the chicken is thoroughly cooked through.

Warm the soft flour tortillas by following the instructions on the box or on the BBQ or grill for 20-30 seconds per side.

to serve

Remove the skewer and place chicken and vegetables on each tortilla on a comfy bed of lettuce. Top with salsa and sour cream and roll to make a fajita. Serve with the lime quarters and fresh coriander.
